Bread Maker Recipes

Paleo Zucchini Bread

Time-taken for preparing: 10 minutes

Time-taken for cooking: 2 hours

Serves: 1 bread loaf

Ingredients:

  • 1 .5 cups of fine almond flour
  • 1 .5 teaspoons of finely grated baking soda
  • 1 teaspoon of finely grated Ceylon cinnamon
  • 1 cup zucchini (grated)
  • 3 eggs (large)
  • 3 tablespoons of natural honey (for best taste)
  • 1 mashed banana (at room temperature)
  • 1 tablespoon of melted coconut oil

Instructions:

  1. In a deep baking bowl, add all the dry ingredients, one by one, begin with the fine almond flour, moving on to the baking soda, and then the Ceylon cinnamon.

Pro-tip: Use a sieve for the dry ingredients.

  1. In a separate bowl, press the zucchini to get rid of excess liquid.
  2. In a separate bowl, beat the three eggs, then add honey, mashed bananas, and melted coconut oil into the egg mixture.
  3. Very gently add the liquid ingredients into the dry ingredients and mix well.
  4. Add zucchini into the mixture.
  5. Stir until a paste-like structure forms.
  6. Transfer the batter into a bread pan.
  7. Select Quick Bread/Cake style option on the bread maker. Press Start.
  8. After four minutes, scrape the bread sides and stir gently.
  9. Allow the cooking cycle to continue until done. It’s best to check the bread every fifteen to twenty minutes.
  10. Once the bread has been cooked, remove the bread and let it cool.
  11. Ice it with some whipped cream (optional)
  12. Cut a piece and serve.

Egg-less Banana Bread with Seeds and Nuts

Time-taken for preparing: 10 minutes

Time-taken to cook: 50 minutes

Serves: 1 loaf of bread

Ingredients:

  • 3 ripe large mashed bananas (room temperature)
  • 0.25 cup and 1 tablespoon of melted coconut oil
  • Maple sugar (according to taste)
  • 1.25 cups whole-wheat fine  flour
  • 3 teaspoons of finely grated baking soda
  • 3 teaspoons of finely grated Ceylon cinnamon
  • 0.25 cup finely chopped walnuts (0.25 inches, approximately).

Ingredients for Topping:

  • 2 tbsp.  of pumpkin seeds
  • Two tbsp. of finely chopped walnuts
  • 2 tsp. of fine flax seeds

Baking Instructions:

  1. Select the ‘Dough’ settings on your bread maker and press the ‘Start’ button.
  2. Combine all the dry ingredients as well and oil the bread-tray/pan.
  3. Mix the mixture using a flat spatula for about 5 minutes, or until the batter forms a paste-like consistency.
  4. Press the ‘Stop’ button and then select the ‘Cake’ option.
  5. Sprinkle the batter with the fine pumpkin seeds, the fine flax seeds, and the finely chopped walnuts.
  6. Put the bread into the bread maker.
  7. Press the ‘Start ‘button again. Once the cooking is complete, insert a knife or a toothpick to check whether the bread is done. If not, then reset the machine to Cake setting, and bake the bread again for an extra 10-12 minutes.
  8. Once done, remove the bread pan from the bread maker and let it cool.
  9. Enjoy!

Whole Grain Bread

Preparing time: 10 minutes

Time-taken for cooking: 55 minutes

Serves: 1 bread load

Ingredients Required:

  • 2 cups finely grated and sieved whole wheat flour
  • 5 cup of finely grated all-purpose flour
  • 5 cup of flax seeds
  • 25 cup of maple sugar
  • 5 cup of finely chopped oats
  • 5 cup of grain cereal
  • 2 tbsp. of coconut oil (melted)
  • 2 tsp. of yeast
  • 1 tsp of table salt

Instructions:

  1. Combine all the ingredients in bread mold.
  2. Select the ‘Whitebread’ or the ‘Whole Wheat bread’ option (if that option is available).
  3. Press the ‘Start’ button.
  4. Once the bread has been cooked, transfer the bread to a rack.
  5. Let the bread cool for 20 minutes before removing it from its mold.
  6. Gently slice the loaf into small pieces.

Paleo Bread with Seeds

Preparing time: 10 minutes

Time-taken for cooking: 1 hour

Serves: 1 bread loaf

Ingredients:

  • 4 tbsp. of chia seeds
  • 2 tbsp. of flax seeds
  • 1 cup of water
  • 3 medium-sized eggs
  • 25 cup of coconut oil (melted)
  • 2 cups of finely grated almond flour
  • 75 cup of finely sifted coconut flour
  • 5 cup of almond milk (unsweetened)
  • 1 tbsp. maple syrup
  • 25 cup of flax seeds
  • 1 cup of finely grated and sifted tapioca flour
  • 25 cup of finely grated and sifted arrowroot flour
  • 1 tsp of fine table salt
  • 2 tsp of grated baking soda

Instructions:

  1. Combine chia seeds, flax seeds, and water in a large baking bowl and put aside.
  2. Beat eggs, add coconut oil, almond milk, and maple syrup in the beaten eggs in a deep bowl.
  3. Add the watery chia seeds mixture into the egg mixture
  4. Very gently stir in the remaining dry as well as liquid ingredients.
  5. Transfer the new mixture into the bread mold.
  6. Press the ‘Whole Grain Bread’ button.
  7. Press the ‘Start’ button.
  8. Once the bread has been baked, remove the bread mold from the bread-maker and place it onto a rack.
  9. Let it cool for about 20-25 minutes before diving in.
